Applesauce Cake

Hi Everyone!

It has been A...WHILE since I've posted so I thought I would post a favorite recipe of mine.  I have had many requests from people who bake themselves and don't need "MotherBirdie"! If you don't know who that is, it's me!  I bake for people locally who don't have time or interest in baking but want something homemade.

"Applesauce Cake"


1/2 C. butter
1 1/2 C. sugar
1 egg
1 1/2 C. applesauce
2 tsp. baking soda
1/2 C. hot water
2 1/2 C. flour
1 tsp. cinnamon
1/2 tsp.. salt
1 /C. "Craisins" (optional, I place mine on top of finished cake)

Cream sugar and butter. Beat in egg and applesauce. Combine soda and hot water in small bowl. Sift dry ingredients and add alternately with the hot water to sugar mixture.
Bake in 2 prepared 8" rounds @350 for 20 minutes and do knife insert check for doneness.

Cream Cheese Frosting
1/2 C. butter
1 8oz pkg. cream cheese 
1lb. box powdered sugar
1/4 tsp. salt 
1 tsp. vanilla
Mix butter and cream cheese till smooth.
Add remaining ingredients (slowly as to not instantly change your kitchen into one giant sugar cloud!)
